Schwarma Spice

This recipe comes to TableFare from Chef Ana Sorturn as part of her contribution to Spice Inspiration. She describes this spice mixture as "amazing when mixed with yogurt to marinate chicken before braising or roasting." Here is our version of Schwarma Spiced Chicken using her spice blend.

Makes about ¾ cup

¼ cup of allspice
¼ cup black pepper
2 tablespoons white pepper
1 tablespoons cinnamon
1 tablespoon cumin
1 tablespoon nutmeg
1 tablespoon coriander

Grind and then measure all the spices. Stir well to combine the ingredients and store in an airtight container. Ground spices are best used within 2 months.
