As the smallest member of the onion family, chives have a correspondingly delicate onion flavor. Look for chives that have been freeze-dried they'll offer the best color, shape and flavor. Freeze-dried chives can be stirred into mayonnaise, cream cheese, sour cream or yogurt to make flavorful dips, sauces, spreads and dressings. They are a given with potatoes and an easy way to dress up simple scrambled eggs. Fish and other lighter flavored foods are a perfect showcase for this brightly colored aromatic herb. Chives are one of the four herbs that make up the popular French Fines Herbs blend along with parsley, chervil, and tarragon. Dried chives are best added to dishes at the end of the cooking process.
