An Indian spice mix that is similar to a curry mix, but using sweet spices such as cassia cinnamon, cloves, cardamom, mace and nutmeg. In Indian culture these spices are considered "warming" making garam masalas an appropriate seasoning for winter months and rarely served in summer months. A selection of these sweet spices are often blended with other spices like black pepper, sesame seeds, coriander, and cumin to create and interesting and complex blend of flavors. Like curry powders, there are probably as many different garam masala mixes as there are cooks. This type of spice mix is used in all sorts of applications and with a wide variety of foods.
Many garam masalas are perfect for giving baked goods a deep complex spice flavor that leans toward the sweet, but has hints of peppery boldness. Try adding some to pound cakes, pancakes, sugar cookies, madeleines, and even chocolate desserts like brownies.
